One of the most iconic images of Scotland, Highland cows – better known more fondly in Scots as Hielan coos and in Gaelic as Bò Ghaidhealach –  are the breed of rustic cattle that originate in the Outer Hebrides and the Highlands.

Thought to descend from a breed first brought by Neolithic farmers as they migrated northwards through Africa and Europe in the second millennium BC, they are distinguished by their long horns, long, wavy coats and a painter’s palette of colours ranging from red to yellow to silver, black, white and brindle.

A staple of the Highland economy for many centuries, with herds being taken in droves for sale in England, they have long been valued for the quality of their meat – particularly in more health-conscious times because of its low level of cholesterol.

A hardy and resilient cattle ideally suited to colder and wetter northern climes and rough terrain, they boast a double coat of hair consisting of an oily outer one covering a soft, downy undercoat, while they are content to graze and eat plants many other breeds avoid.
